Red, White, and Blue

Hope you all are having a great Independence Day! It’s on and off raining all day and we’ve just been lazing around and enjoying a brief break from bar exam studying.

Without going into too much detail, some of you might have noticed that I didn’t post my usual Wednesday post yesterday? Well I think I’ve decided that I won’t be doing those weekly posts anymore, or weekly posts of any kind. I have nothing against them (heck, I created like 4 of my own…remember Meal Plan Mondays?), but I think I’m going to try a new approach to my posting schedule. I want to be more intuitive and natural about what I share here, not just doing certain things because it’s a certain day of the week. I’ll post when I’m inspired, when I have food that I’m excited about, and maybe when I just want to say hello to you lovely people! And when I have time. 😛 I will do “food journal” type days every once in a while too, so if you like those posts then never fear. Thank you in advance for being patient with me, as blogging here is always a learning process for me.

Speaking of food… (most creative segue ever)…

I’ve been doing a lot of overnight oats lately for breakfast. When I have the foresight to think ahead to the next morning, I’m always so thankful the next day to have an awesome grab-n-go breakfast.  This morning I was inspired by the holiday and topped my oats with festive fruits. Red, white, and blue!

If you’ve never made overnight oats before…what are you waiting for?? All I do to make mine is stir together equal parts of greek yogurt, milk, and old fashioned oats. I usually do 1/2 c. of each for a nice helping. Then you stick it in the fridge and forget about it! In the morning, the oats will have softened and plumped and you can add whatever toppings you like. I usually do 1/2 c. or so of fruit, a little honey, and sometimes nuts or granola for a little crunch factor. It’s magical.
