WIAW: Grill Time

Things are pretty good over here! The dog, while still having some problems, seems to be getting more adjusted to his new home. Studying for the bar exam is still crazy, but for now we’ve stopped stressing to the max. We have a while to prepare and are confident that our work will pay off. And of course (most importantly) we’ve been eating well. My kitchen is 85% unpacked/ready to use, so I can actually make meals at home now.

 

Breakfast: whole wheat toast, strawberries, scrambled eggs

Lunch: Chipotle veggie and black bean quesadilla

These things are HUGE. Definitely only ate half, but it was delicious.

Dinner: fried plantains, grilled vegetables, grilled chicken (for my friends)

We had my friends Emma and Ansley over for dinner tonight! I’ve known them both since I was 12 (that means 13 years!) and am so glad to still be in touch. Our paths have diverged and we’ve all moved away and done all sorts of things these past years, but for now we’re all back in Georgia! Love it. These girls are some of my favorite people in the world.

Our new apartment has a nice grilling and dining area out by the pool, so we enjoyed our dinner al fresco. I made some fried plantains back in our apartment, then I grilled some chicken, squash, zucchini, and mushrooms outside. Great summer meal!

Dessert: fudge truffle cheesecake

After dinner we went inside to our place for dessert! This cheesecake is one of my favorite desserts to make for company.
