Meal Plan Monday: Thank You, Crockpot

Things are still crazy, but the end is in sight! Only TWO more weeks of classes after this week. Until then, I’m still running around like a chicken with my head cut off. I’m working the night shift at my part-time job every day this week (except for tomorrow), and so I won’t be at home for any dinners. This means that the crockpot will be my savior! It’s so great to throw something in there and know that Jason will have dinner ready for him when he wants it.

Monday: vegetable pad thai (it’s a great frozen item at TJ’s)

Tuesday: fried chicken, chicken fried tofu, greens, yams

Nothing like a traditional soul food meal. Jason’s been asking for this for weeks. We’ll see how the fried tofu goes for me!

Wednesday: chipotle lime chicken (for Jas), rice and peas, green beans

Love rice and peas (which is actually beans)!

Thursday: stir-fry

Friday: braised lamb shanks, grain pilaf, and salad for Jason, something bought at work for me

Saturday: dinner in DC!

 

I have a phone interview now and then I have to run to work!
