WIAW: Dessert First

Halfway through the week! WOHOO! Our spring break is next week, and to say I’m looking forward to a break is an understatement. Just a couple more busy days to get through and we’re home free. As per tradition, here’s the snapshots of what I ate this Wednesday.


 

Breakfast: cream of wheat with molasses and coconut chips

Here’s the story. I lived on oatmeal, Wheatena, and Cream of Wheat as a kid. Hot cereals are so underrated these days. Last year I rediscovered Cre

am of Wheat, then I discovered that they came out with a whole grain version. My life was complete. Then I finished the box. Then I forgot about it. Now I have a new box. Life complete again.

Lunch: Pappa Johns…it wasn’t pretty

Afternoon Snack: protein smoothie

I went for a run today with the goal of increasing my distance a little. I walked to the gym and back and did 3.5 miles on the treadmill, which rounds out to about 4 miles total. It took me FOREVER and it HURT, but it’s progress.

After my run I made myself a smoothie with one of these Jamba Juice packets I bought at the grocery store. It makes SUCH DELICIOUS SMOOTHIES! I stretched out the bag by adding some frozen banana and orange juice. I will be repurchasing this for sure.

Dessert First: fro-yo

It’s awesome being an adult. You can do stuff like throw caution to the wind and get frozen yogurt right before dinner time. It makes you feel alive.

Dinner: eggplant parm, kaleidoscope chard

I tried to make up for my veggie fail today my eating a massive pile of chard. I feel better now.

I still might have a piece of chocolate before bed.

    Ooh from what I can see, the eggplant parm looks great! Did you use a special recipe? I would love to try eggplant made this way and the chard looks great as well! How do like the vegetarian lifestyle so far? Hope you have a great weekend!

      The eggplant is my mother-in-law’s recipe–I’TS SO GOOD. I’ll have to get permission from her and do a post on it because it’s amazing. Vegetarian life is good so far! 🙂 Happy weekend!

    Cream of wheat was my favorite breakfast growing up, though ours was much more simple. Just milk and sugar added. So yummy!

    Love your comment about being an adult. I’m only 18, but technically “adult.” Lol. And it’s so true. I can stay up as late as I want now. 🙂 But, I don’t..

      That’s how I ate it as a kid too! It’s some delicious stuff.

    Oooh, I love eggplant parmesan! It really does make vegetarian life good =) I’m not much on hot cereals, but cream of wheat sounds good, so I will have to try it out sometime. Thanks to your WIAW posts I decided to try out a Luna Bar – it was so good!
