I still can’t believe what happened this weekend! My friends have all gone home now and it’s still pretty surreal that they were ever here!
I’m glad that we celebrated already because even though it’s my birthday week, I’m really not going to have time to do much in these next few days. I’m working every night except Wednesday and pulling some LONG shifts. In fact, the meal plan this week is really for Jason because I’m not going to be home for dinner at all.
Jason is doing Weight Watchers and so I’ve been trying to make sure that our meals fit inside his point requirements. WW is actually working well for him (he’s down 5 lbs. already!) and I’m going to have him do a post on it once he’s been doing it for a little longer.
Here’s the plan.
Sunday: loaded carne asada nachos (for the Superbowl, of course)
Monday: leftover pot roast sandwiches
Tuesday: MY BIRTHDAY! dinner at Bonefish Grill
Wednesday: shrimp and grape tomato pasta, salad
Thursday: Indian curry lamb, brown rice, spinach
Friday: chile lime chicken burgers, salad
Saturday: roasted chicken, hasselback potatoes, braised kale
I’ve got an 8-hour shift tonight so I better pry myself away from Barefoot Contessa and go get ready.
