Meal Plan Monday: Off to TJ's

I started this morning with a nice hearty breakfast! Just how every day should start.

A couple pancakes and 2 eggs scrambled with spinach, chicken, and brie cheese. I got a new brie from Trader Joe’s that’s covered in chives. Delish.

Speaking of Trader Joe’s, after class I went home to write out a meal plan and grocery list for the week and then headed straight for the store.

Lately I’ve been sticking to one grocery trip a week. It helps keep things straight for budgeting, and it helps to keep me from impulse buying since I’m there almost every day for work. And I only go to ONE store for all my groceries! 😉

Here’s the stash I came away with. And it all added up to only $42!

Here’s the plan.

Sunday: Cajun blackened cod, dirty rice, pinto beans

Monday: chicken and vegetable stir fry, brown rice

Tuesday: pork tenderloin, broccoli, crockpot potatoes

Wednesday: chicken tacos

Thursday: coconut shrimp, thai salad

Friday: pot roast, mashed potatoes, broccoli

 

I need to go watch last night’s Downton Abbey before I read a spoiler of it online…

    Do you make meal plans for weight loss reasons, organization reasons and/or economic reasons? I noticed that you are very organized. You seem to plan everything out, even classes and time, week by week. It’s motivated me to start doing the same.

      Thank you! I meal plan for time and budgeting reasons. I don’t have time to go grocery shopping several times in the week, and I tend to impulse buy when I do that which wastes money. I need to be efficient or else dinner won’t get cooked! 🙂 I may do a post about this.

        Thanks! Yeah, that does make a lot of sense. I live by myself and I noticed that I’ve started over eating too because I don’t plan things out with grocery shopping or life; it’s a way to cope and it’s not a good way to cope. I’m going to try and plan out two weeks worth of food and life and see how far I get.

    How did you manage all of those groceries for only $42? Do you coupon, or do you get one heckuva discount? Or is TJs cheap? I’ve been trying to manage keeping the grocery budget down while still eating healthy. It’s tricky! And what Callie said about you being organized–I’m pretty organized, but you motivate me to stay that way. 🙂

      Trader Joe’s has great prices! What I do is buy all my meat at Costco like once a month, then I get all my other stuff at TJ’s once a week. I do get a discount but their prices are awesome to begin with. For example, they have great bagged salads that are only $1.99! Can’t be beat. 🙂
