Korean for Dinner

Having class this morning came as a rude awakening! Every day for the last month I’ve either slept in or gotten up at 5am for work (and then napped later ;)). It was weird to have a day that actually started at a “regular” time. We ended up racing to get out the door in time with no time for breakfast! I whipped up a quick fruit smoothie and ran out the door. We were starving by noon and had some time between classes so we treated ourselves to Panera for lunch.

I had a chicken salad sandwich and cesar salad with an apple and some iced green tea to drink. I discovered their iced green tea back when I was doing a detox and wasn’t eating refined sugar. The tea is sweetened with papaya juice and it’s delicious!

We spent the rest of the afternoon in the library and in classes. I should probably have been getting a head start on homework or something. But that’s not what I was doing!

I was thrilled to get home around 6 and start dinner. Had to have a quick snack before I started cooking. I LOVE these Inner Peas chips! Man are they tasty! They remind me of Cheetos I think?

To start on dinner I grilled up some marinated korean BBQ beef from Trader Joe’s. I knew as soon as I smelled it cooking that it was going to be good!

While the meat was in the grill pan I heated up some kimchi rice (also from Trader Joe’s, of course).

I threw some thickly sliced cabbage in the grill pan when the meat was done to cook it down a bit. This whole dinner took about 15 minutes to prepare and was awesome!

And some bubbly water on the side from my new Soda Stream machine! I’m in love with that thing. And with my hubster for getting it for me.

I don’t have to work today so I am officially a free woman for tonight! It feels awesome! It’s early enough in the semester that I don’t have homework piling up yet. All of these things add up to me being a very happy camper.

I’m off to go watch tv in my Snuggie.

    YUM. Is that the pre-marinated meat? I’m always so hesitant to get those… but I bet they’re good.
