Meal Plan Monday: Back to School

There’s one good thing about school starting today. It’s my LAST “first day of school” ever! Despite having to hit the books again, we’re doing well over here. Downton Abbey started up again last night (any fellow fans out there?) and that automatically makes my life better. I loved the 2 hour premiere, it was so juicy!!!

Back to school means back to reality and back to keeping a schedule. I haven’t meal planned for quite a few weeks, but it’s definitely time to get back into it. We overindulged over the holidays (who didn’t?) and are trying to get back on track with healthy eating. Planning is a huge part of that so I’m trying my best to stick with it, even though a lot of days I’m working nights.

Here’s the plan.

Sunday- curry chicken tenders, salad, garlic naan bread

Monday– minestrone soup (work night)

Tuesday– Korean BBQ, kimchi rice, broccoli

Wednesdaychicken and avocado egg rolls, salad

Thursday– on our own (work night)

Friday– teriyaki salmon, fried rice, spinach

Saturday– garlic linguine with sausage and peppers

 

Since I have no pictures to show you that are relevant, here’s a random photo of my sumer kale salad.

I have a few hours left to enjoy before I have to go to work. Time for a nap and some Food Network. Thanks for reading!

    I love Downton Abbey, too! To the point where I want to start dressing like they do all the time. I even got a cloche hat from my hubby for Christmas. 🙂

    I have been reading your blog for a few days now, and can I say that I just love you and your blog! You seem like you have it all together. I tried making your chocolate frozen Greek Yogurt by the way, and it was a total fail! I doubled your recipe, used vanilla Greek yogurt, and did not have an ice cream maker. So somewhere along the way, it turned into an epic disaster. I could never get the consistency of ice cream, and I could never get the sour milk taste to go away no matter what I did! I may have to try Prototype 2 once I have an ice cream maker.

    I also love that you live in Williamsburg but want to move to Atlanta! My husband and I just visited Williamsburg and Jamestown a couple of months ago and absolutely loved it. We’re from Georgia originally but recently moved to NC. I have to ask, though…how do you do it all? How do you find the time to go to school, work part-time, and keep up this amazing blog with the amazing photographs? Just having a full-time job, I find it hard to stay consistent on my blog. And, I hope this isn’t too personal, but if you are both full-time students, how do you afford to make all these amazing dishes? We both work full-time and have committed to a healthy eating and exercise plan, but it really gets expensive. It’s hard to balance everything! I would love some insight from someone who seems like she has it all figured out! 🙂 And sorry for rambling.

      Thank you for all the sweet compliments! Life is definitely a balancing act and I wouldn’t be working if I didn’t have to, but I feel blessed to have a job. Things get overwhelming at times but I like being busy! As far as money goes, we’re being supported by student loans and my job on the side. We keep a strict budget and don’t do much spending outside of groceries and bills. Having an employee discount at a grocery store doesn’t hurt either! 🙂

        Oh and I’m sorry to hear about the yogurt! I’ve never tried it without an ice cream maker so I can’t really offer suggestions on that front. The chocolate yogurt does have a certain tanginess to it that some people don’t like. I hope it works out better if you try it again!

          Thanks for sharing! Well, you are truly an inspiration. You make me want to keep writing and sharing and trying to do it all. I’m also going to look to your site when I start to think about falling off the healthy eating wagon!
