Blogmas Day 2: Cranberry-Nut Gingerbread

Consider yourselves lucky! As you are reading this, I am sitting in a room taking an exam (I have two separate 3-hour exams today) running on less than ONE hour of sleep and feeling all sorts of jittery from the energy drinks that are keeping me alive. But that’s not going to put a damper on my Blogmas spirit!

This is a quick and easy “semi-homemade” recipe that’s perfect when you need something to take to a party but don’t have much time.

All I did to make this delicious quick bread was prepare a box of Trader Joe’s gingerbread mix (you can also use Pillsbury or any other brand) according to the package directions, then when the batter was mixed I gently folded in 2/3 c. dried cranberries, 2/3 c. rolled oats, and a full cup of chopped walnuts. Then I sprinkled some rolled oats and sugar on top and baked it according to the box. The flavor combination of the ginger with the nuts and cranberries is amazing, and my co-workers were very glad that I decided to share it with them.

    Hope the tests went well! Hmmm, a free woman for the rest of the year??? That won’t last long, or maybe you are saying you are getting married at 5:00 on Jan 1? ! Whatever, hope it works for you!
