WIAW: Gangnam Style

Let’s get into more serious matters: FOOD! Something has been going well and lately things have been awesome in the food department. I haven’t had a dinner fail in so long. Jason’s making a healthy lifestyle change and has already lost 5 pounds since making the change (SO proud of him!). And I’ve managed to stay within my grocery budget even better than I usually do! #winning

I’m just waiting to burn dinner/forget the salt (both of which have happened several times) any day now.

Breakfast: Kodiak waffles, fried egg, glass of fresh apple juice

I got the Kodiak whole grain pancake/waffle mix (not gonna lie…mostly I got it because a certain blogger raves about it) and am definitely loving it in waffle version. All you have to do to the mix is add water! So easy. It’s a tad pricey so I won’t be buying it frequently, but it’s a nice treat to have in the house.

Jason was inspired to juice some of the apples we got from our Off the Vine Market produce share. It was SO good. It took a good six apples to make a nice big glass of juice for both of us! There’s no comparison between this fresh deliciousness and the stuff in a bottle off a shelf.

Lunch: grilled turkey and cheddar cheese on whole wheat bread, seaweed salad

Both eaten on the go! Had to drive the husband to class.

Dinner: pre-dinner cocktail, vegetable lasagna

The cocktail was a mixture of apple cider vinegar, honey, cinnamon, ginger, and a little water. I’m trying desperately to cure a bad case of acid reflux. I can’t escape my heartburn, no matter how I change my diet, and I’ve got to fix it! I’ll tell you more about it another time, once I know if this remedy works.

Then we had a delicious lasagna full of zucchini, squash, and eggplant! I used brown rice lasagna noodles (which we prefer to the taste of whole wheat pasta) and it came out so well. The lasagna recipe is one I saw watching America’s Test Kitchen last weekend. It’s a winner! I went back for seconds.

Dessert: a couple healthy double chocolate chip cookies

You know the ones…
