WIAW: Look Out, Food!

This week is actually flying by! We’re heading out of town tomorrow night so it feels even shorter than usual. In the meantime I’ve been keeping myself busy with law school EATING. My steroid induced appetite has been ferocious as per usual, and I’m starting to notice a difference in the way of a bit of water retention but still no weight gain (*knock on wood*…actually I could use a few extra pounds…)! See for yourself–it’s quite clear that my eating habits have changed. I feel sorry for the food anywhere within a couple feet of me because it doesn’t stand a chance.

But I’m still managing to get in some veggies! Thanks to Jenn for hosting the WIAW link party and for starting the great challenge for April.
Breakfast: bowl of cereal, almond milk

Recycled pic alert. I actually had a bowl of Puffins this morning but I was literally so starving when I woke up that I ate them before remembering to take a picture! 😛

Second Breakfast: breakfast burrito (steak, scrambled egg, shredded cheese, pico de gallo) 

Morning Snack: trail mix

(Again, so hungry that I completely forgot to take a picture…blogger fail…but this is the same bag of trail mix that I ate from 😉 )

Lunch: Hugh Jass salad (this has spinach, goat cheese, tomatoes, raisins, and roasted chicken in it with white wine vinaigrette), hunk of broccoli-cheddar cornbread

I was craving some date pieces in my salad but someone (I’m glaring at you Jason…) has taken a liking to them and had eaten them all. Raisins are an okay sub though. Dates are now on my grocery list.

Afternoon Snacks: lace cookies, vegetable chips

Theses cookies are SO DELICIOUS and addictive. I know when I buy them that I won’t be able to show any restraint when eating them, so I usually only get them a few times a year. It makes each time extra special. Like right now.

I also did some damage to this delicious bag of veggie chips later in the afternoon.

Dinner: chicken tacos w/ cheese, black beans, and tomato

We have leftover roasted chicken to use up before we go out of town, so after using some in my lunch I decided to have it again for dinner in quick taco form. I just shredded and heated the meat in a skillet with some spices, lemon and lime juice, cilantro, and TJ’s enchilada sauce. It was delicious! I had two of these bad boys.

Sparkling water on the side! I squeezed the juice of half a lemon inside and it really hit the spot.

Dessert: mixed berry crisp

I whipped us up a couple individual (vegan) crisps with fresh strawberries and blackberries. Or at least they were vegan until I did this:

I made a note to myself to do a post on this dessert because it’s easy, healthy, and very tasty.

    Oh I would really love to see a recipe for that berry crisp dessert! and for your tortilla/tacos, do you use regular wheat or whole wheat or anything?? I find it soo hard to get some whole wheat tortillas over here 🙁 I once tried to make a batch myself but it’s just too much work..

    Those crumbles do look delicious. As do those laceys cookies. Oh man! I totally have a bunch of foods I cannot buy because I will eat em all.
