Pina Colada Smoothie

I think I’m finally coming back to doing regular posts now! Hooray! This week is a serious budget eating week for us (the end of the month always is) so I’ll be doing some wallet-friendly recipes later this week. One thing I always do to save money is buy something when I see that it’s on sale, and then just figure out what to do with it later! Pineapples were on sale this week at our Trader Joe’s so I bought a nice big one that should last us several days.

Yup. You gotta love the 70’s. Who doesn’t love pina coladas?? I actually hate getting caught in the rain because it makes my hair crazy frizzy… Anyways this refreshing smoothie is nutritious and the perfect way to use fresh pineapple.

Pina Colada Smoothie

  • 1/2 c. orange juice
  • 1/2 c. coconut milk
  • 1 c. crushed ice
  • 1 banana
  • 3/4 c. fresh pineapple

-Blend all ingredients except for ice until smooth. Add ice and mix for another 30 seconds or until there are no ice chunks left. Makes 1 large smoothie.

SO DELICIOUS!!! I think I drank my entire thing in like 3 minutes. Jason stole some and made it into an adult beverage…haha! It tastes like summer!

    Yum! I’m crazy about all things coconut (Just had young coconut muesli for breakfast). I’m sooo making this on the weekend… or this afternoon!

    I love pina colada, I do an overnight oats recipe. I actually had those for breakfast yesterday morning. I also do pina colada pancakes, haven’t made those in a while – guess I need to 🙂
