Two of Us: A Breakfast Fit for Sweethearts

When Jason and I had our first “conversation” (via online instant messenger) almost 5 years ago, we spent a lot of the time talking about what we liked. I had butterflies in my stomach the whole time because each time he named something that was important to him (poetry, music, etc.) it just so happened to be something that was just as important to me. It was crazy, it felt like he just said all of the exact things that I would have wanted a boy to say. We learned in the first few minutes that we had all of the same favorites musicians and authors, and one of the things we quickly bonded over was our love of The Beatles. I think for that reason alone, their music will always have a special place in my heart (even though I’m pretty sure it did anyways).

And in addition to it being a sunny breakfast in bed kind of morning, it’s also really feeling like a Beatles kind of morning, hence the name of the post.

French Toast Hearts

  • 4-6 slices of bread
  • 2 eggs
  • 1/2 c. almond milk
  • pinch of cinnamon
  • tiny sprinkle of nutmeg
  • tiny sprinkle of allspice
  • 1 t. sugar
  • 1 t. vanilla extract

-Using a cookie cutter or a sharp knife, cut hearts into slices of bread. (Don’t worry, if you can only get one heart out of each slice you can use the extra bread for croutons or breadcrumbs)

-In a shallow dish (I used a pie pan) whisk together the remainder of the ingredients until well combined.

-Add the bread hearts to the egg mixture and allow to soak for five minutes, turning over once.

-While the bread is soaking, preheat a greased pan or griddle to 375 degrees. Fry the toast until golden brown on both sides, about 5 minutes.

Fun Scrambled Eggs (inspired by recipe in The Whole Life Nutrition Cookbook)

  • 3 large eggs
  • 1 t. salt
  • 1/2 t. black pepper
  • 1 roma tomato
  • 1 t. cilantro
  • 1/4 c. finely shredded cheese (whatever type you prefer, I use cheddar)
  • 1/3 c. organic whole milk or 1/4 c. half and half

-Whisk together eggs, salt, pepper, and milk in a bowl. Dice tomato and chop cilantro.

-Grease and heat a skillet or griddle to medium heat (350 degrees) and scramble eggs until they are solid but still very moist. Add tomato and cilantro and toss with a spatula to combine.

-Sprinkle eggs with cheese and remove from heat. Serve while hot.

I served the eggs and french toast with some fresh strawberries and bacon. A perfect breakfast for the two of us!
