Peanut Butter Oat Clusters

After polishing off my granola and several bags of banana chips in the past week, we’ve been on the hunt for a new snack. Jas requested oat clusters that “aren’t quite as toasted”…which is his way of saying he doesn’t like granola and just wants the cluster part without it tasting toasted. So here is my little creation.

Halfway through I actually thought it was going to be a flop, but I improvised a little and it turned out really great! They are crunchy on the outside and a little chewy on the inside, and the peanut butter flavor is not overwhelming but it’s there. This is a good start to the afternoon! Plus, my daffodil plant is already growing so much–look!

Since I’ve been sitting here typing this I swear two more buds have opened. I love nature. Anyways, on to the recipe.

Peanut Butter Oat Clusters (DF and V)

  • 1/2 c. Earth Balance Spread
  • 1/2 c. light brown sugar (not packed)
  • 1 T. honey
  • 2 t. peanut butter
  • 1 1/2 c. oats

-Melt together the spread(you can use butter if you want), brown sugar, honey, and peanut butter in a small saucepan or in the microwave.

-Add in the oats and stir well to combine.

-Spread the oat mixture onto a pregreased cookie sheet and bake for 10-15 minutes.

(this is before it’s baked)

-Remove from the oven and stir around with a spatula. Carefully remove the oats to a cooling rack using the spatula. Let cool about 15 minutes.

-When the mixture is cool, break it apart into clumps roughly. Enjoy!
