PB, Chocolate, and Banana Oatmeal

We registered for fall classes this morning! I can’t believe we’re already planning for our second year, it’s so crazy how fast this is going! I feel like college graduation was just last month! I got into Health Law & Policy which was the #1 class I wanted so I’m really excited about that! PLUS…wait for it…next semester I’ll only have class on Mondays, Tuesday, and Wednesdays. YUP. I’ll have a four day weekend EVERY WEEK!!! Who said this law school thing is hard? Just kidding, whoever said that was right. But still, 3 days of class is something I can’t complain about. I also can’t complain about how delicious this oatmeal was.

I’ve been experimenting with chocolate oatmeal, but found that just adding cocoa powder tastes cocoa-powdery and not chocolatey…in my opinion. This time I tried just melting some dark chocolate into the oatmeal and I think the result is MUCH tastier. And still dairy-free/vegan! (Although I think milk chocolate in it would be to die for…) I used Chocolate Covered Katie’s melted banana trick and added some of my homemade peanut butter, and this came out so well!

Peanut Butter, Chocolate, and Banana Oats

  • 1 1/2 c. almond milk
  • 3/4 c. old fashioned oats
  • 1-2 T. chopped dark chocolate (you could also use chocolate chips)
  • 1/2 mashed banana (microwaved with the melted banana trick)
  • 1 t. organic sugar
  • 1 T. peanut butter

-In a small saucepan heat the milk to a low boil. Add the oats and cook for 5 minutes, whisking occasionally.

-Whisk in the banana and cook for another minute. Turn the heat off and add the sugar and chocolate. Whisk together to combine.

-Serve immediately with the peanut butter on top! Makes one large serving.
