Shrimp & Grape Tomato Pasta (for two)

This is a really fun post for me because this is Jason’s all time favorite dinner, courtesy of his wonderful mom!

Drumroll please…

It’s a very simple and tasty shrimp pasta dish that can be whipped up in about 30 minutes! Awesome! I’m glad his favorite meal isn’t something overly complicated that would take all day to make…I got lucky on this one.

Of course when Jason eat this, he COVERS it in cheese, cayenne pepper, and red pepper flakes, so it looks nothing like the lovely dish above. But hey, that’s his style. ๐Ÿ™‚ Thank you to my mother-in-law, who is a wonderful cook, for this great recipe!

Shrimp & Grape Tomato Pasta for Two

  • 1/2 lb. angel hair or thin spaghetti
  • 1/2 lb. uncooked shrimp
  • 1/2 box grape tomatoes, sliced in half
  • 2 cloves minced garlic
  • red pepper flakes
  • extra virgin olive oil
  • salt and pepper to taste

-Heat a large pot of water on the stovetop to boiling. Boil the pasta according to package directions while you prepare the rest of the dish. This is the pasta I use:

-In a shallow pan, heat 1/4 c. olive oil over medium heat. Add the minced garlic and 1 t. red pepper flakes to the oil. Sautee for 1 minute.

-Prepare the shrimp (rinse, peel, whatever you need to do) and add them to the hot oil.

-Sautee for 3 minutes.

-Add the grape tomatoes and sautee for another 2 minutes.

-By this time the pasta should be done cooking. Drain it and toss lightly with olive oil.

-Turn off the heat on the pan, add the pasta to it, and toss to combine. Voila!

Add a nice green salad, some crusty bread, and a glass of wine….perfect dinner.

I’m off to do some serious outlining and reading for my classes….2 more weeks until final exams. I can’t believe it! The first year of law school is flying by like crazy. It’s a little stressful because 100% of our grades come from the final exams so you really only get one shot. I have to keep remembering that a mere two years from now I’ll be buying my cap and gown for my LAST graduation ever. That is awesome.
