Cool Cantaloupe Granita
I LOVE Wednesdays, it’s so refreshing to have a day off in the middle of the week. We both got a lot of sleep, which was much needed! I was in the mood for something cool and sweet, and since I can’t have ice cream until Lent is over I thought I could try to make something myself. I also happened to have half of a cantaloupe that I wanted to use up, so I searched Epicurious (I LOVE this website and the app!!!) and found a recipe for a great sounding granita.
Also, I got a trial of Lightroom!!! Wholesome Cook let me know that students can get a huge discount on the software so I decided to get the free trial to take it out for a spin before I buy it! Thank you SO much for the tip Martyna! I’m having so much fun learning how to use it, but I think it will take me a while (it’s very different from the old Photoshop that I had years ago) to get the hang of it completely.
I only wish I had known about this dessert/snack sooner! It would be so good with SO many kinds of fruit, I’m thinking strawberries, blackberries, watermelon, kiwi, mango, orange, peach…endless possibilities! Plus NO dairy and NO refined sugar! Awesome.
Cool Cantaloupe Granita (inspired by this recipe from Gourmet magazine)
- 1/2 of a very ripe cantaloupe
- 1-2 T. of honey (to taste, it doesn’t need much)
- 1 cup crushed ice
- juice from 1/2 of a lemon
-Cut the flesh out of the cantaloupe, roughly chop it, and place it in the bottom of your blender. Add ice and the other ingredients on top.
-Blend to puree the mixture completely. Pour the mixture into a metal pan.
-Put the pan in the freezer for 1 hour. Remove the pan from the freezer and scrape the surface of the granita gently with a fork spoon to serve. Makes 4 servings.
I was dark and cloudy out today. This picture would normally not have been able to happen. Did I mention I love Lightroom?
I can’t wait to use my dad’s DSLR this summer in conjunction with this program. So. Excited.
