Peanut Butter Banana Bread
Not only have the storms lifted, but it’s a BEAUTIFUL day outside today! Happy Palm Sunday!
With the crazy studying time going on right now, I won’t have time to do an elaborate Palm Sunday dinner, but that doesn’t mean we can’t enjoy some delicious snacks.
And it also doesn’t mean I can’t sport my beautiful new apron.
Ain’t it pretty?! I LOVE IT!!! I found in on sale at T.J. Maxx and immediately knew we were destined for eachother.
This apron and I are a wonderful team. I think she gives me good luck, and helps my recipes turn out even better.
Peanut Butter Banana Bread
- 1/2 c. demerrara sugar
- 1/2 c. applesauce
- 2 large eggs
- 4 overripe bananas, mashed well
- 3/4 c. peanut butter
- 1 T. canola oil
- 1 c. unbleached all-purpose flour + 1 c. white whole wheat flour (or whatever mix you like)
- 1 t. baking soda
- 1/2 t. cinnamon
- pinch of nutmeg (optional)
- 1 t. vanilla
- 1 T. soymilk (or whatever milk you want)
- extra demerrara sugar for sprinkling (optional)
-Mix the sugar and applesauce well in a mixing bowl until the sugar has mostly dissolved.
-Add in the eggs, banana, peanut butter, and oil. Mix well.
Anything with this much peanut butter is bound to be good. And homemade peanut butter to boot!
-Add in the flours, baking soda, salt, cinnamon, and nutmeg. Mix well with a wooden spoon. Add the vanilla and milk and stir again.
-Pour the batter into a greased loaf pan (or you can do muffins if you want). Sprinkle some sugar on the top if you want.
-Bake at 350 for 65-70 minutes (check with a toothpick or knife for doneness). Let cool 10 minutes in the pan before transferring to a wire rack to keep cooling.
After it’s has time to cool down, slice and enjoy! Makes 8 servings.
This bread is moist and delicious! It would be great with nuts and/or chocolate chips added to the batter.
Side note, Pioneer Woman is going to have her own Food Network show???!!!! WAAHHH I AM SO EXCITED!!! She is one of my kitchen heroes, for real. I’ve loved her for years (since she was on Oprah…), long before I entered the blog world. I will watch every episode of this show, probably while freaking out on my sofa. I am so glad that she is becoming even more of a household name. So. Awesome.
