Bread Addictions and A Greek Festival
I’m alive! After the second exam (which was yesterday) I was totally spent. The exam was FIVE HOURS and I was starving and exhausted after the first two…which was to be expected because I stayed up the entire night before. I took a study break at 6am to watch the royal wedding of course!!! That was amazing. It totally lifted my spirits and left me aflutter the entire day. I teared up more than once…Kate was so incredibly beautiful and I couldn’t stop thinking about how overwhelmed and lucky she must have felt to know that Prince William chose her out of all the people in the world to be his future queen. Gah, so beautiful!
Anyways, I have ONE last exam left on Tuesday but we took today as a rest day. And that means making bread. I totally LOVE making bread, it is my new addiction (in case you hadn’t noticed). The whole process of trying new breads and then having fresh bread throughout the week is so awesome. Today I tried Hokkaido milk bread, a japanese bread that my mom’s been telling me about for a while. I was waiting until Lent was over to make it since it has dairy, but now’s the time (also the probiotics are helping with the dairy issue! more on that another time)!
The thing that makes it unique is mostly the tangzhong (water roux) that works as a starter for the bread. This was soo soft and very good. I followed this recipe from Noshings at Tasty Kitchen exactly so there’s no reason for me to re-write it. It’s a great recipe and I highly recommend it.

After making the bread we decided to head over to the Williamsburg Greek Festival, which is going on all weekend just a few minutes away!
It was fun! They had vendors and lots of food, and adorable little kids in Greek clothes who danced.
We got spanikopita and fried calmari!
Fun day! Tomorrow will have to involve studying…but it’s going to be the first Soul Food Sunday here on the blog! Get excited!
