Blueberry Banana Mini Loaves
So tests are over, as I have mentioned. This is a great thing. Cause for celebration. However, now Jason and I are staring at a whopping 500 PAGES (499 to be EXACT) of materials that we’re supposed to use in the law journal competition in the next 7 days. Kind of ruins the celebratory mood.
But, alas, as you know from all of the crazy things I was making during exams, I certainly don’t let work stop me from having my fun in the kitchen. If all goes well, at the end of this week we will have eaten many delicious things and written papers that will earn us membership on a law journal. Or if that second part fails, at least we will have still eaten many delicious things.
Blueberries were on sale (only $2, awesome!) but I hate blueberry muffins so I decided to go somewhere a little different with them.
And I made mini loaves because…well they’re cute for one thing, and there’s only two of us for another thing so small recipes are better.
Banana-Blueberry Mini Loaves
- 1/4 c. butter
- 1/3 c. sugar
- 1 egg
- 1/4 c. lowfat sour cream
- 1/3 c. mashed banana
- 1 t. vanilla extract
- 1/2 c. white whole wheat flour
- 1/4 c. all-purpose flour
- 1/4 c. old fashioned oats
- 1 t. baking powder
- 1/4 t. salt
- 2/3 c. blueberries
-In a medium sized mixing bowl, cream the butter and sugar together with an electric mixer until light and fluffy.
-Add in the egg, sour cream, vanilla, and mashed banana and mix until smooth.
-In a separate small bowl, combine the flours, oats, salt, and baking powder.
-Add the dry ingredients to the wet and mix until well combined. Fold in the blueberries with a rubber spatula.
-Lightly grease two mini loaf pans and split the batter between the two. Bake in a 350 degree oven for 40 minutes, or until golden brown on top and a toothpick inserted in the center comes out clean.
-Remove from the oven and let cool 5 minutes in the pan before flipping out onto a rack to cool. Cool for 20 minutes before slicing. Makes 2 6″ x 3″ loaves.
This was the perfect size recipe for us, one of these loaves is already history in fact. It’s so moist and just the right kind of sweet to balance out the blueberries!
