First Barbecue of the Summer

Today was our last day of freedom! We’ll be starting work tomorrow morning, so from now on we’ll have full working days. Being at home has been awesome so far. How could you not be in a good mood when your mom makes you this for breakfast?

With ice cold freshly squeezed orange juice on the side. And I mean FRESH, as in Jason squeezed it last night from a case of oranges my mom bought!

Also Ashley has been on a healthy eating adventure just like me. She even wrote a story about it.

For an early dinner we decided to grill! Kabobs and grilled chicken, with fresh bread to go with it of course. My mom whipped up these AWESOME rolls and showed me how to make perfect balls of dough.

So. Delicious.

The grilled chicken was done first because it cooks pretty quickly. My dad is the grillmaster.

And the centerpiece here was the kabobs.

Beef and Veggie Kabobs (from 30 day gourmet)

  • 4 lbs. beef sirloin
  • 1/2 c. canola oil
  • 1/2 c. soy sauce
  • 1/2 c. worcestershire sauce
  • 1/4 c. yellow mustard
  • 2 t. black pepper
  • 1 c. vinegar
  • 1 T. dried parsley
  • 2 t. minced garlic
  • 2/3 c. lemon juice
  • 3 zucchini
  • 3 medium sized onions
  • 3 bell peppers

-Prepare the ingredients for the marinade (from the oil to the lemon juice on the ingredients) and blend them together in a food processor.

Marinate the beef for at least 4 hours.

-Cut the vegetables and beef into cubes. Soak some bamboo skewers in water for 30 minutes before skewering the beef and vegetables.

-Grill over direct heat for about 15 minutes, turning to cook all sides.

-Move the kabobs to indirect heat and cover the grill to let them smoke until tender and cooked to desired doneness.

YUM! We had some corn and coconut rice with it too! Awesome summer meal.

I’m a little nervous for our first day of work tomorrow, but I’m optimistic about it. At least Jason and I are in it together, that makes me feel a lot less anxious about it. I’ll let you know how it goes!
