Overnight Oats

What’s up party people? I hope you’re enjoying the start to the weekend. For me and the hubs this weekend is going to be about getting this household organized. I need to make meal plans for the next week and make myself a serious to-do list for the less fun administrative things that need to be done (updating my resume, buying textbooks, etc.). I also haven’t finished the blog makeover! ๐Ÿ˜› I’m not thrilled with the header (I still want it to include pics like my old one) and want to work on it more. So I wanted to kick the weekend off with a fun breakfast to encourage some productivity!

Half of you are going Yum, overnight oats! the other half are probably going What is that stuff with black dots? What weird thing is she eating now? Well, today for the first time I tried overnight oats. I don’t know why I waited so long! Since it’s cold this is a PERFECT summer breakfast, and I’m just now trying it at the end of summer.

Overnight oats are just raw oats soaked in liquid overnight to “cook” them. The entire process can be done the night before, which makes it a great breakfast in a hurry. I did mine KERF style with 1/3 c. oats, 1/3 c. almond milk, 1/3 c. greek yogurt, and 1 T. chia seeds. I stirred all that together and put in in the fridge overnight. In the morning I added some granola and half a fresh peach on top! Delicious! The oats get nice and soft and the chia seeds make it all gel together so it has an almost pudding-y consistency.

I have to say, I did make overnight oats a long time ago but I didn’t have chia seeds then. It was gross. Chia seeds are not only really good for you, but they bind the oats together really well. I’m definitely going to be making these oats a lot, I love that it’s so fast and easy to customize. If you can get your hands on some chia seeds (I got mine at the farmer’s market in Altanta), you should really try this! It’s extremely filling and I’m embarrassed to say that I got so full I couldn’t even finish it!
