Spice Roasted Nuts
I still can’t really absorb the fact that it’s November. How can there only be two months left in 2011?! Since I made some goals at the beginning of October (the first time I ever made monthly goals on here), I thought it would be a good idea to check in on how I did and maybe make a couple new goals.
1. Go meatless one day a week
We actually managed to do this! I’m not sure if Jason even noticed, but I’ve been doing vegetarian dishes on Mondays. For example, last night for dinner we had whole wheat pasta with pesto sauce and roasted sweet dumpling squash on the side. We also enjoyed a couple Mama Pea dishes during October, which was great.
2. Focus on eating seasonally
Check! I’ve managed not to grab any thousandsofmilesaway peaches or blueberries or anything like that, and we’ve been good about eating everything that comes in our CSA boxes. Apples are really the fruit in season here right now, and you already know how I’ve been enjoying those.
3. Try new ways of preparing veggies
Check!
Honestly, these are goals that I want to keep focusing on so I’m just going to keep the same ones for November! Another goal is to try not to immediately inhale all the awesome Halloween candy I got at 50% off today. In an effort to eat the candy in moderation, I made us another delicious–and much healthier–snack.
Roasted nuts are the best! And they’re even better with some spices roasted onto them to accent their flavor. These are addictive.

There’s nothing like a good combo of sweet and salty…it’s one of those things that I like more and more with time. Also, I’m learning that cinnamon pretty much tastes good in anything. I’m glad I discovered this.
The ‘burg put up Christmas ribbons today. Definitely not ready for that! I’m happy to partake in holiday foods, but I’m surely not ready for Santa and candy canes just yet. I don’t get why the onslaught has to happen so early every year. I like to just think about one month at a time and one thing at a time. Like trying not to attack that Halloween candy and choosing to attack something else.
