My Head is Elsewhere

I am one of those people who, when starting in on something important that I’m supposed to do, spends endless hours daydreaming and planning and doing everything except what I’m supposed to be doing. Since this semester has started (which, mind you, has been only four days) I’ve spent a lot of time thinking about buying a French course, pontificating what method I will use to get our future children to be healthy eaters, watching Food Network, reading birth stories, aaaannnnd planning our spring break trip. Yes, it’s the first week of classes and we have planned our spring break trip. And no, I’m not pregnant, I’m just obsessed with babies.

I was going to wait to say anything until we actually got to spring break (which is the first week of March) because I realize for you guys it’s probably not that exciting…but for me it is very exciting and therefore I can’t help but share it with you! You might remember that back in the fall we took a camping trip to a lake in central Virginia. I absolutely LOVE camping and being outdoors, and that was the first time Jason and I went camping together. It was awesome.

THEN when we went apple picking in the western part of the state, the mountains, streams, and falls took our breath away and I just knew that we had to camp there come springtime.

So now you must be thinking that we’re going camping for spring break! Ah! No. The region where we want to camp doesn’t have open campgrounds until way after our school’s spring break, and even if it was open it has a HUGE population of these guys…

Umm yeah…no thank you. I read way too many stories online about campers in Virginia having not so fun black bear run-ins. I know they’re not naturally agressive towards humans, but they still terrify me. So instead of camping there we’re going to do the next best thing…stay in a beautiful inn there! We happened to snag an amazing livingsocial deal for this adorable place right in the Appalachian.

It’s gorgeous, isn’t it?! I can’t wait to show it to you in person. It’s absolutely perfect because we can still hike in the beautiful mountains, but can stay away from the bears and the elements for the rest of the time. All Many of our peers see a perfect spring break as going to the beach with a million friends and drinking until they can no longer see straight. That is not our style. I will spend it with my best friend and love of my life, breathing in the clean mountain air and enjoying a three course breakfast that someone else cooked for me. I can’t wait. Too bad I still have two months until the break! 😛

Tomorrow I will actually have a recipe for you guys! It’s been a little too long.
