Pink Monster

Hope you’re having a fun weekend! I am still under the weather, getting worse actually… (still on the no complaining goal though! ;)) I’m off to see a specialist on Tuesday who can hopefully give me some answers and get me feeling better soon. In the meantime I’ve been eating a lot of Cream of Wheat and drinking A LOT of liquids. Mostly because it’s the only thing that makes my throat feel better! But one thing I’ve been missing is my UGS (which I haven’t been taking because it’s full of probiotics and I’m on antibiotics) so today I was really craving a smoothie. I decided to go pink instead of green!

I’ve talked about my “pink monsters” before but lately I haven’t been having them because my green smoothie is like a staple I can’t ย live without! But if you’re looking for a delicious and refreshing way to get your fruit in, this is a great way! Since it’s the winter I used frozen berries, which I actually like better because frozen ones make a better smoothie. Inside the pink monster is:

Besides just tasting good, here are the reasons I choose these ingredients:

  • orange juice–> calcium, vitamin C, makes the smoothie deliciously tropical tasting ๐Ÿ™‚
  • raspberries and strawberries–> antioxidants, more vitamin C, maganese
  • yogurt–> friendly bacteria, calcium, protein
  • banana–> potassium, fiber
  • flax seeds–> omega-3s, fiber
So much goodness in one glass!

Pink Monster Smoothie

Prep Time: 5 minutes

Ingredients (serves 1)

  • 3/4 c. orange juice
  • 1/4 c. frozen raspberries
  • 1/2 c. frozen strawberries
  • 1/2 a frozen banana
  • 1 t. flaxseeds
  • heaping T. of yogurt

Instructions

Add the ingredients to a blender (liquid on the bottom) and blend well until very smooth. Add more orange juice as needed to reach your desired consistency.

If you want more of that strawberry milkshake type feeling, sub in almond milk (or whatever milk you like) instead of O.J.! For some reason I just like O.J. in this one, it really goes with the tartness of the berries. YUM!
