WIAW: Meat and Potatoes

I forgot to take pictures yesterday so you’re getting what I actually ate on Wednesday! I’ve been trying to clean up (or rather, green up) my diet lately and I think I’m making progress. Things are still busy but I’ve finally gotten into a groove of how to cook us fresh dinners every weeknight despite having night classes. My crockpot has never gotten such a great workout!


Spooky Snacks and Healthy Halloween Treats
 

Breakfast: oatmeal with apple butter and chopped nuts swirled in, chai tea

I made some of my crockpot apple butter a couple days ago with the apples we picked over the weekend. I had to test it out, and what better way to do that then with a nice bowl of oats. It was heavenly alongside a hot cup of chai with milk and honey.

Morning Snack: sliced Fuji apple with peanut butter

Lunch: mixed greens salad topped with fresh cheese, nuts, dried cranberries, and roasted chicken

I went to Trader Joe’s today (to apply for a job, actually) and came out with this new-to-me bag of greens that I turned into a lunch salad.

One of the toppings on my salad was some fresh cheese that I made yesterday!

Before you call me crazy, making cheese at home is actually really easy. I’m going to share the simple tutorial tomorrow!

Dinner: roast beef, crockpot potatoes, romaine salad with tomatoes

While I was in Medical Malpractice class I let a roast beef rest in the oven and some potatoes cook away in a crockpot. When I got home all I had to do was throw together the salad.

The potatoes were so delicious this way! And more importantly, so easy.

Believe it or not, Virginia tomatoes are still amazing. I didn’t expect ones this late in the season to be very good, but this one was maybe the best tomato I’ve had all year.

A Woodchuck to wash it all down.

Dessert: magic

Seriously. These bars are even better the next day!
