Meal Plan Monday: Off to TJ's

I started this morning with a nice hearty breakfast! Just how every day should start.

A couple pancakes and 2 eggs scrambled with spinach, chicken, and brie cheese. I got a new brie from Trader Joe’s that’s covered in chives. Delish.

Speaking of Trader Joe’s, after class I went home to write out a meal plan and grocery list for the week and then headed straight for the store.

Lately I’ve been sticking to one grocery trip a week. It helps keep things straight for budgeting, and it helps to keep me from impulse buying since I’m there almost every day for work. And I only go to ONE store for all my groceries! ๐Ÿ˜‰

Here’s the stash I came away with. And it all added up to only $42!

Here’s the plan.

Sunday: Cajun blackened cod, dirty rice, pinto beans

Monday: chicken and vegetable stir fry, brown rice

Tuesday: pork tenderloin, broccoli, crockpot potatoes

Wednesday: chicken tacos

Thursday: coconut shrimp, thai salad

Friday: pot roast, mashed potatoes, broccoli

 

I need to go watch last night’s Downton Abbey before I read a spoiler of it online…
