Tropical Fruit Salad with Whipped Coconut Cream

I love this time of year because it’s when all the fruit gets sweet again! I’ve been neglecting veggies a little in favor of bowls of fruit…I can’t help it.

Did you know that you can make whipped cream from chilled coconut milk? If you’re vegan or a health nut like me then you’re probably familiar with this idea. But if you haven’t tried it before, you MUST! The milk fats from the coconut milk blend into silky smooth deliciousness when cold. You can either skim the solid white cream off a can of full fat coconut milk, or you can buy straight coconut cream from TJ’s which can be used as is.

The whipped coconut cream is heavenly on top of fruit, especially pineapple. It would be heavenly with pretty much anything!

 

Tropical Fruit Salad with Whipped Coconut Cream

Prep Time: 5 minutes

Ingredients

  • 1 can coconut cream
  • 1 T. powdered sugar
  • 2 c. cubed pineapple
  • 1 c. cubed mango
  • 1 c. cubed papaya
  • 1 c. mandarin orange slices

Instructions

Chill your can of coconut cream in the refrigerator overnight.

Empty the chilled coconut into a mixing bowl and mix on high speed with a whisk attachment for a few minutes, until the cream is light and fluffy.

Add the powdered sugar into the cream and mix for another 30 seconds to incorporate it fully.

Toss fruits together in a bowl, top each serving of the fruit salad with dollops of the whipped coconut cream.

I thought I had enjoyed coconut in just about every way possible, but I was wrong! This whipped coconut cream is going to be a new staple for me. It’s so easy to make and there are so many possibilities.
