Anyways, I’m just popping in to let you know that I’m alive. Finals are crazy, but I’m halfway done and soon it will all be over. I can’t wait to reunite myself with you all!
In the meantime, have some pizza.
Last night around midnight while I was studying for my copyright law exam, I took a 10 minute break to make some dough and throw it in the fridge to proof overnight. It’s a variation on a white dough that I’ve made before but this time I changed up the flours and the result was seriously awesome. Pizza dough is so simple and it’s almost always FREE to make because it just uses common pantry ingredients. Well worth my 10 minutes. And well worth yours.
Pizzaria Style Whole Wheat Dough

Ingredients (serves 4)
- 2 c. white bread flour
- 1 1/2 c. whole wheat flour
- 1 T. vital wheat gluten flour
- 2 1/2 t. instant yeast
- 1 T. honey
- 2 T. olive oil
- 1/2 t. salt
- 1 1/4 c. warm water
Instructions
Mix all ingredients together in a stand mixer or food processor (can also be mixed by hand, but be prepared for a workout!) and let it knead until it forms a smooth dough ball that holds an indentation when you press your finger into it.
Place the dough ball into large ziploc bag and place it in the refrigerator to proof overnight.
A couple hours before you want to eat, remove the dough from the refrigerator. Punch it down and divide it into however many pizzas you want to make. Cover the balls with a kitchen towel and let rest until the dough comes to room temperature.
Preheat oven to 450 degrees.
To prepare each pizza, stretch the dough ball into a thin circle on a flour dusted board.
Top with desired toppings and bake on a pizza stone until golden brown (about 8 minutes).
This pizza marks the 7th straight day that we’ve eaten exclusively at home. This is a HUGE accomplishment for us! Neither one of us ate out at all this week, not even for a coffee or an ice cream or anything! It’s good for our budgets and it’s helping us clear out our stockpile of food that needs to disappear before we move out. To celebrate an entire week of eating in, I stopped by Extraordinary Cupcakes and got something for us to share.

I never realized pizza dough could be so easy! Definitely trying this out soon; it’ll be a welcome break from delivery.
Good luck on exams! My oldest friend is going through the same thing. She’s wrapping up her first year of law school and practically lives at our old university’s library.
