Greetings from exam studying central.
I have three exams and a final paper spread out over the course of the next two weeks, and I’m trying to be good about waking up early and devoting all my time to studying. So far so good, but we’re only a couple days in! Planning out food is even more important in times like these when I don’t want to waste time thinking about what to have for breakfast, lunch, or dinner. So I actually planned a little bit more than I usually would so that food isn’t one of the things we need to worry about this week.
I made a list of some things we can have for breakfasts and lunches and bought some things to supplement our pantry. For example, I made a big fruit salad (Pioneer Woman’s awesome new recipe) this morning for us to eat as snacks or with meals for the rest of the week.
I also bought a bunch of salad fixins’ that I’m going to clean and chop today so that they’re ready when we need them. And of course, I had to plan our dinners.
Sunday: curry tofu, naan, spinach

Monday: vegetable and tofu stir-fry in teriyaki sauce
Tuesday: arroz con pollo for Jason, leftover black bean soup for me
Wednesday: rice and beans
Thursday: pesto pasta
Friday: stir-fry with island teriyaki sauce
Saturday: pizza
