Honesty is always the best policy right? Well honestly, I’ve been exhausted. Too exhausted to blog. The combination of law school+working a physical job+job hunting in a terrible economy has been way more taxing than I could have imagined. I am just really darn tired. So I had taken pictures of my food on Wednesday and fully intended to participate in the link-up event hosted by Jenn like I usually do…but when I got home at 11:30 after class and a 7 hour shift at work, I was too darn tired.
It makes me sad that I don’t have the expanse of free time to blog like I used to. It also makes me sad that I’m not home to cook dinner every night. I don’t think I realized how lucky I was to just have HOURS of time every single day where I was doing nothing but playing around in the kitchen and taking photos and sometimes doing nothing. I miss lounging around on the sofa and falling asleep watching tv!
But this is a challenging financial time and I’ll need to work as long as I possibly can (which is probably up until graduation). I need to learn how to make everything work! And at the moment, making it work means posting a “what I ate Friday” instead of “what I ate Wednesday”.
Breakfast: Umqua oats
I got these single-serve oatmeals from Costco and they are AMAZING. Full of nuts and fruit and perfectly sweetened. You just add hot water, let it sit a minute, and go! Jason makes it for me by sticking it under the Keurig and then putting it on the small cup of water setting. Makes it even faster! I’m actually eating another one of these as I type this.
Lunch: sandwich at Wawa, tomato soup with cheese
I intended to wait until we got home from class to have lunch, but I got STARVING before that. So I got a sandwich at Wawa (they have great made-to-order sandwiches!) with lettuce, tomato, spinach, cucumbers, peppers, avocado, and swiss cheese.
Then when I got home I enjoyed some TJ’s organic tomato soup with a little colby jack on top.
Afternoon Snacks: banana, Kefir, Starbucks
I love this little single-serve Kefirs! Another Costco buy. They’re delicious, high in protein, and low in lactose. Perfection.
I normally wouldn’t get Starbucks if I had already gotten something to eat out, but Jason needed the car and I had to get dropped of to hang out somewhere until my shift started. Oh well. I can’t complain about extra Starbucks. I tried the tiramisu parfait along with my usual soy latte and it was sooooo good.
Dinner: veggie wrap, chocolate covered edamame
This was a night shift day so “dinner” was eaten break room style.
I’ve got a few errands to run, but otherwise I plan to enjoy my day off with a whole lot of nothing. 🙂

While I’m sorry to hear how busy/tired you are, I’m glad that’s the only reason you haven’t been around as much! Why have I never heard of that tiramisu parfait? I looks awesome! Keep your head up, life always has crazy moments but you’ll make it through.
