Meal Plan Monday: Double Life

YEAH. And that’s only the stuff I’ve written down so far. It feels weird to be in school and also working! Classes by day, work by night. Sometimes I feel like I’m living a double life. When I ring people up at work and it comes up in conversation that I’m in law school, they’re always shocked. I’m shocked too… 😛 The money I’m making goes towards me being able to become a barred attorney (there’s a ton of costs associated with that), and so I know that this is all worth it. When I think of our future kids and the comfortable life we’ll be able to have because of how hard Jason and I are working, I know that I’m doing the right thing.

I’m lucky that I have an amazing husband who has been taking care of EVERYTHING around the house since I took up the part-time job. Cooking is still my territory though. 🙂

Here’s the plan for this busy week.

Sunday: roasted chicken, southern mac and cheese, southern green beans

You guys saw this one yesterday!

Monday: french onion soup, mixed greens salad

(Eating this as I type…so yummy!)

Tuesday: leftover roasted chicken, butternut squash casserole, broccoli

I miss this casserole! Haven’t made it in months and months.

Wednesday: jambalaya and brown rice

Thursday: steak (for Jason), lentils (for me), baked potatoes, baby romaine salad

Friday: beef enchiladas, refried beans, spinach

Saturday: leftovers
