Howdy, people! I know I haven’t been around much lately and I’m really sorry about that. Blogging is kind of a therapeutic outlet for me, so when I skip posts it actually feels detrimental to me probably much more than it does to you. I’m just coming off of 4 days in a row where I was working 6am shifts at Trader Joe’s, and final exams are next week. Not to mention the consulting firm I’m writing articles for has an increase in their work load because of the holidays. Having said that, I don’t think I neen to explain why I haven’t had much time for developing recipes.
Even though I’m running purely on coffee and don’t have time to even meet all my obligations, I’ve still been cooking! Folks gotta eat, right?! My goal this week is to cook as much as I can to FILL UP the fridge so that we can survive through finals week without ending up at a drive-thru.
Here’s the caffeine-propelled plan.
Sunday: leftover white bean and vegetable soup and homemade rolls
Monday: tandoori salmon with avocado crema, mixed greens salad
Tuesday: white chicken chili
Wednesday: BBQ chicken wings, raw veggies and dip
Thursday: beef and vegetable sitr fry
Friday: leftovers (I’m working the night shift)
Saturday: leftovers? (working the night shift again!)
Since I’m working the night shift a couple times and won’t be home for dinner, what I might do is cook some meals and freeze them for next week when I have pockets of time during the day. We shall see! I’ll be sure to post about it if I do.
I’m sleepy. Very sleepy.

No need to apologize for being MIA. Life sometimes gets in the way, doesn’t it? Working night shifts makes cooking (and photographing!) dinner hard. I have no doubt you’ll make it work though. I love white chicken chili!
