The start of the week is here again! It’s a gorgeous fall day here in Virginia…sunny, in the 70’s, and leaves in gorgeous colors.

In case you’re catching up from the weekend, here’s a recap of the recipes I shared over the past couple days.

On Saturday I woke up in a mood for chocolate, and so I came up with this indulgent variation of my favorite buttermilk waffle recipe. It came out splendidly and could easily be breakfast or dessert.
This breakfast bowl really surprised me and I can’t believe I never tried something like this at home before! Creamy, rich cheese grits underneath sweet braised veggies and a farm fresh egg over medium. Holy smokes. Incredible. I was full for 4 hours.
Since I’m going to be attempting to stick with Soul Food Sunday posts on Sundays, I’m going to switch the day that I share my weekly meal plan to Monday. This made it a lot easier for me to come up with a good name!
Fair warning, now that I’m working at Trader Joe’s you will probably see a lot more of thier products showing up in my meal plans and on the blog in general! I’m still going to try to make meals from scratch whenever I can, but now that I’m working (close to full time hours) and still taking a full course load, the wholeseome convenience foods at TJ’s are going to come in mighty handy.
Here’s the plan:
Sunday: BBQ baby back ribs, BBQ baked beans, haricots vert with lemon garlic dressing

Monday: Spaghetti and meatballs, romaine salad

Tuesday: Mama Pea’s loaded baked potato soup
Wednesday: TJ’s mandarin chicken, fried brown rice, sauteed spinach
Thursday: TJ’s wagyu beef burgers, mixed greens salad
Friday & Saturday: leftovers (I’m working during both of those nights)

Spaghetti and meatballs!! Mmmm that’s one of my boyfriend’s and my favorite comfort-food meals. I’m definitely going to have to make this soon. Your meatballs look delicious!!
