I’m trying to come up with a better name for this weekly post where I share what we had for dinner along with my meal plan for the week. Any ideas???
Tonight we enjoyed parmesan crusted tilapia, Jenna‘s caramelized brussels sprouts, and home fries.
I have to say, I think the home fries were my favorite part of the meal! Crispy and delicious. I used local yukon gold potatoes from our most recent produce share and they were wonderful.
Speaking of local produce, I’m hoping to use up a bunch of it in meals this week!
Here’s the plan:
Sunday: parmesan crusted tilapia, caramelized brussels sprouts, home fries
Monday: broccoli and chicken stir-fry
Tuesday: armenian chicken, brown rice, sauteed kale
Wednesday: stuffed acorn squash
Thursday: Mexican pizza
Friday: leftovers

I love that brussel sprout recipe! You’re not even going to tell us how to make those home fries??
