I hope you guys all had a great Halloween! I forgot to take pictures of my eats yesterday BUT I decided to do it today so that I wouldn’t miss out on the What I Ate Wednesday fun.
Good thing to because today is Hallowsgiving! That’s right. Not Halloween. We aren’t the biggest Halloween people, but we ARE big food people and big Thanksgiving people. And thus, Hallowsgiving was born. Because Thanksgiving is way too awesome to only happen once a year.
Before I get to our huge Hallowsgiving dinner, here’s what I ate the rest of the day.
Breakfast: oatmeal with apple butter and peanut butter, chai tea enjoyed in tax law class
Lunch: Moe’s taco stack (tortilla, tofu, guac, salsa, rice, black beans, cheese), sparkling water
Dinner: beer brined roasted turkey, turkey gravy, kale dressing, cranberry sauce, whole wheat parker house rolls, butternut squash mac and cheese
I can’t even believe that I went through all this trouble on weekday. When I had a day class. And a night class. I’m crazy. And you can tell where my heart is.
But I like being crazy. Jason and I started this tradition of doing a “mini Thanksgiving” around this time of year so that I could have a chance to make my own menu just for the two of us. It’s so much fun! Until I take over Thanksgiving duties for our larger family, I imagine that we’ll continue to have Hallowsgiving to give me a chance at free reign over the kitchen. 😉
Recipes to come tomorrow! I’m way too tired to write them all up now. So tired, in fact, that I completely forgot a whole dish that was supposed to go along with this meal! Poor brussels sprouts…but I can’t really say that we missed them. We were too distracted.
And on top of it all, I filmed an October favorites video for you guys today! If only I could apply all this hard work and determination to my schoolwork…hmmm…

Wow everything looks so delicious! I love the idea of Hallowsgiving since I don’t really celebrate Halloween myself. I am so impressed with how much you cook during the week! Do you come up with all of these recipes? I hope I can become as proficient in the kitchen as you are some day 🙂
