Pumpkin Spice Brown Sugar Cookies

I’m afraid that with everything that’s been going on, I’ve failed to bring you any Halloween recipes! Even though I really don’t celebrate Halloween at all, I was still planning on doing some fun and festive recipes for those of you that do. But time got away from me. So here we are, the night before the big day…

Better late than never right? I love sugar cookies and have been meaning to make brown sugar cookies for a long time. I wish I hadn’t waited so long–they’re scrumptious!

If you don’t like pumpkin, don’t worry. There’s no actual pumpkin in these, just that glorious mixture known as pumpkin pie spice that make these cookies more festive and flavorful. You can bake them in small rounds or roll the dough into fun shapes like I did with the pumpkin. Either way they’re delicious!

 

Pumpkin Spice Brown Sugar Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients (2 dozen cookies)

  • 1 1/2 sticks of butter, softened
  • 1 1/4 c. light brown sugar
  • 1 egg
  • 1 t. vanilla
  • 2 c. all-purpose flour
  • 2 t. baking soda
  • 1/2 t. salt
  • 1 t. pumpkin pie spice

Instructions

Whip sugar and butter together with an electric mixer until light and fluffy.

Add egg and vanilla and whip for another minute.

In a small bowl, stir together the remaining ingredients, then add them to the wet ingredients with the mixer on low.

Mix on low until the dough “comes together” (is moistened throughout and forms like dough).

Put the dough in a small bowl and refrigerate for 30 minutes.

Preheat the oven to 350 degrees.

Use a cookie scoop or tablespoon to scoop dough onto a lined cookie sheet (either with parchment or a baking mat) and bake the cookies in the preheated oven for about 10 minutes, or until golden brown around the edges.

Cool in the pan for 2 minutes before transferring to a cooling rack to cool completely.

P.S- For those of you wondering, Sandy didn’t do nearly as much damage in Virginia as was expected! We’re totally fine! Didn’t even lose power. Jason’s family (who all live in NY/NJ) are also safe but are all without power and probably will be for a while.

    So glad to hear you and all your famy members are safe and sound. The news footage of all the damage over there on the Eady Coast is truly terrifying. Those cookies on the other hand sound really delicious. I’m going through butter fast these days. Must be getting colder 🙂
