I hope you all are having a great weekend filled with good food and time with people you love! We got some hard news yesterday that we lost a family member (on my husband’s side), and so I think it’s a good idea to take a little time off from blogging. We’ll be going to New Jersey to be with Jason’s family and you guys should see me again by the end of the week. So no meal plan this week–sorry. But we had already gone grocery shopping before we had the news so now we’re in a frenzy to eat up a bunch of good food before we go. Hence this delicious Sunday dinner.
I made us an herb crusted and honey roasted rack of lamb with twice baked sweet potatoes, sauteed green beans, and multigrain bread. Rack of lamb is a very occasional splurge for us (I’m talking like once a year) so when we eat it we kind of feel like royalty. The lamb was wonderful and once I’m done with this post I’ll go write up the recipe and put it on autopublish for tomorrow.
I used a cranberry wine that I got when we were at the Italian Festival last weekend to make a reduction for the lamb and then also to drink while cooking with dinner.
So much goodness.
