We were having so much fun this weekend that my usual meal planning fell by the wayside! But we got a wonderful local produce share this past Friday and I did my meal planning for the week today. Still have to go grocery shopping! This morning Jason mentioned he was in the mood for Asian food, and so I decided on a shrimp and tofu pad thai.
As you can see I’m a big fan of loading up on the chopped peanut “garnish”. You can hardly see the noodles! Dinner hit the spot and Jason even made us some sinful Thai iced tea to go along with it.
A day later than usual, but here’s our meal plan for the week!
Monday– pad thai noodles
Tuedsay– chicken noodle soup (crockpot)
Wednesday– tamale casserole (crockpot)
Thursday– oven fried chicken, candied yams, collard greens, cornbread
Friday– dinner out in celebration of fall break!

YUM – I adore Thai food! I can never seem to make it taste anything at all like the Thai restaurant though.
