Happy Sunday! It wasn’t exactly a day of rest over here, but we did manage to get ourselves out of bed and make it to church this morning. I always feel better during the week after I go to church on Sundays. Today we heard a great (and really unique) sermon about the importance of loving everyone, regardless of what their faith is. Words to live by! Then I did my usual meal planning and grocery shopping and before I knew it…time for dinner!
Tonight we had shrimp scampi pasta (another Barefoot Contessa recipe) and a salad of romaine lettuce. The flavors in this pasta are so simple and classic (garlic, lemon, a little parsley) but SO delicious. Sometimes simple is better.
Meal plan for the week:
Monday: pulled pork BBQ sandwiches, BBQ baked beans, asian slaw
Tuesday: crockpot chicken tacos, mexican rice, refried beans
Wednesday: asian salmon, fried rice, bok choy
Thursday: spaghetti and crockpot meat sauce, salad
Friday: leftovers
Saturday: in-laws coming to visit!

Your weekly menu plan is a great idea…I live alone and would love to be more organized about my meals…the Asian salmon sounds good. I make salmon with a marinade I made up – olive oil, sea salt lemon juice, dijon mustard, ginger, garlic, paprika, pepper flakes, and parsley…very yummy!
