Today was quite a productive one! Not having classes on a weekday is GLORIOUS. It almost makes up for the fact that we have classes on Labor Day. Almost.
My afternoon started out with a favorite snack of mine.
Peanut butter, banana, and chocolate sandwich! On whole wheat bread of course. 😉 It’s quite the delicious combination. I use the Trader Joe’s chocolate syrup that is made with real chocolate. Mmmm.
We spent a big chunk of the day unpacking clothes that never got unpacked. We did so much traveling this summer that it’s hard to realize that we’re staying PUT now. Our closet was a disaster so in addition to unpacking I gave it a little cleanup/makeover. There were boxes in there that we haven’t touched since we moved in two years ago! Not cool.
It’s hard to tell from the pictures but it looks a MILLION times better. I literally had a shoebox sized closet all through college so I fully appreciate having a nice big walk-in.
So much more room for everything!
We weren’t the only ones who got more room today. We decided to upgrade our betta fish Fred to a larger tank! He can survive in much smaller but we feel that the humane thing to do is give him a ton of room to play in.
After we moved Fred into his new place I got started on dinner. I love fajita night!
The Tyler Florence fajitas are in our regular meal rotation because the recipe is AMAZING and never gets old.
The spread:
Remember those tomatillos we got in our local produce share? They got turned into salsa verde tonight!
Other fixins included greek yogurt (in lieu of sour cream), chipotle salsa, shredded cheddar, and some wonderfully carmelized onions and peppers.
And of course the star of the meal was the marinated flat iron steak:
We made it all complete with some chips and queso and a couple margaritas!
A good night indeed.

That sandwich looks amazing… and dangerous, haha. I’ve never tried the chocolate sauce from TJs, but now I think I’ll have to!
Great job on the cleaning up! I love a newly-organized space. Makes me feel so happy and calm 🙂 Fred’s tank looks awesome! I’m sure he’s loving the extra space even though he doesn’t need it.
