Today was our Friday because we don’t have classes on actual Fridays. SO glad the weekend is here. We’re about to celebrate with a movie and a cold one. But before I do that, let me show you what we had tonight!
Chicken in wine sauce (a favorite recipe from Jason’s family), green beans sauteed in olive oil and shallots, and a farro salad with cherry tomatoes based loosely on a Giada recipe. This was our first time having farro! It’s a hearty Italian whole grain that I actually found at my local Costco in a grain blend.
I loved the farro salad but Jason was skeptical. I knew he would be! I know him better than the back of my own hand. But I also think that it will grow on him, especially if I cook it risotto style next time. It’s too nutritious of a food to pass up!
