WIAW: On the Road…AGAIN

Déjà vu much? I’ve driven well over 2,000 miles in the past couple weeks and am beginning to feel like a day where I don’t get in the car is a VERY strange day. But after a crazy 10 days of college visits, dinners with family, a wedding, and flat tires…we are DONE. We are officially in Virginia for the year and not going anywhere anytime soon. I appreciate your patience with me in my absence! Next time I’ll try to have the foresight to line up some guest posts. For now…it’s time to show you what I ate this Wednesday.

 


Breakfast (still in NJ with the in-laws): whole wheat toast with peanut butter, peach, chai tea

Second Breakfast: pancakes

I was making pancakes for Jason after I had already eaten breakfast and decided they looked too good to miss out on! Delicious.

Lunch: strawberry-cucumber limeade, mixed greens salad, crispy honey shrimp with brown rice

We stopped at a P.F. Chang’s on the road in Maryland for some lunch! It’s one of my favorite restaurants and we were both thrilled that one was on the way to Virginia.

Afternoon Snack: cupcake sampler

The town where Jason’s folks live in New Jersey has a Crumbs Bakeshop (which is a famous cupcake chain) and I stopped there yesterday to pick up a little sampling. We got stuck in traffic so I made the most of my time by taking down half of a dark chocolate cupcake.

Dinner: eggplant parmesan, broccoli, multigrain bread

Jason’s mom sent us home with some of her world famous eggplant parm! I sauteed up some broccoli and stuck the eggplant in the oven along with some take-and-bake bread from the store. Great meal!

I don’t think I have room anywhere for dessert!

    Crispy honey shrimp…. I want some!! Haha.
    Glad you can finally catch a breather, and maybe finish the rest of those cupcakes. They look so good!
