WIAW: On the Road Again

I’m late to the What I Ate Wednesday party! But there’s no way I’m missing it. And, contrary to what my extreme lack of posting might lead you to believe, I’m alive and well! I’ve been on the road A LOT lately and just haven’t had the time (or always the internet) to blog. Last week we left Georgia and my whole family (Jason, my parents, and both my siblings) drove up to Virginia. We killed two birds with one stone by visiting colleges for my brother and moving our things back up to Virginia for the upcoming semester. It was fun and weird to look at colleges all over again!

I was a tour guide in college and during my senior year I interviewed perspective students, so it’s always so weird for me to visit other admissions offices and go on tours. We had some great visits! University of Richmond and William & Mary turned out to be our favorites!

I have a family of foodies so you can imagine that we made sure to find some great eats while traveling.

After a few days of visits, we said goodbye to the rest of my family as they headed back home to Georgia! Jason and I spent the rest of the day relaxing at our house in Virginia and then it was time to hit the road again! We’re in New Jersey spending some time with Jason’s family, then we have a wedding in Massachusetts to attend over this weekend, then we’ll come back to Jersey again for a couple more days with the family before going back to Virginia for good. This has been a crazy few weeks!


It can be hard to eat well on the road, but things went well this time around!

Breakfast: granola, fruit salad

In case you haven’t noticed, I now eat granola every day for breakfast! I bought a 6 lb. twin pack from Costco and I’ve been taking that thing DOWN. I only have a few servings left!

There was some fruit salad in the fridge that would have gone to waste so I polished it off right before heading out the door.

Snack: nut clusters

On the road I snacked on these True North nut clusters. They’re all natural, delicious, and a great steal if you know the secret that Big Lots sells them for a huge discount!

Lunch: black bean cake wrap, soda water

We’ve been trying to avoid fast food so instead I look for small towns along our route and we get food there. This time we were starving around the time we hit Fredricksburg. I got off at the exit, passed all the fast food joints and followed signs for Historic Fredricksburg. We got outside to find a really cute little town! It was a risk worth taking to go out of our way for better food and I was happily surprised.

After a quick check on my Urbanspoon app, we immediately found a good option for a healthy and delicious lunch! The wonders of technology.

Sammy T’s had great reviews and lots of vegetarian and vegan options! Perfect.

Soda water with lime to drink!

Our food was AMAZING. SO glad we took the extra few minutes.

After our bellies were full we got back on the road! The trip to NJ is only supposed to take 7 hours with stops, but we ran into unforeseen traffic and so it took us two more hours than usual. We didn’t want to have dinner of the road, so we stopped for gas and a quick snack.

Afternoon Snack: honey wheat pretzels, grapes, cheese, apple slices

I found this great little tray inside a Sheetz gas station! Perfect.

Dinner: chicken and broccoli pasta

We finally got to Jersey around 10 and dinner was waiting for us! Thank goodness because we were starving! Jason’s mom is a great cook and this was delicious.

Since the wedding is this weekend and Jason’s in the wedding party, we’re actually going BACK on the road tomorrow morning. My right foot has never gotten so much exercise.

    What ever is in that wrap looks awesome! How exciting to be out looking at colleges. I never did it, but if I had I probably would have started at the university I ended up at because the campus makes my heart melt.

      Even after all the college visiting I did for myself, I actually ended up going to a college that I had never laid eyes on before!
