Sisterly Love

It’s probably pretty clear from my posts this summer in Atlanta that my sister and I are thick as thieves. Every since she was born when I was 15, I’ve never wanted her to leave my side. I call her Angel because when she came into the world it truly felt like God had given her to my family as a little piece of heavenly joy to brighten our lives. I love her more than words can say. It breaks my heart not to live in the same city as her, and so when we are together (like this summer!) I do my best to make the most of my little angel. Today making the most of it meant spending way too much money at the craft store to make our own bracelets at home…

(Can you tell whose hand is whose? Hers is getting so big, I can hardly believe it!!!)

Making the most of it meant getting bitten my 8,000 mosquitos while doing a photo shoot of her for an upcoming guest blog post on fashion for my bffl Emily. Ashley is pumped to tell everyone about why maxi dresses are the best summer trend ever.

Making the most of it meant coloring some My Little Ponies (do it in the accurate colors please…Fluttershy’s mane is NOT purple but pink).

Making the most of it meant going along with things when Ashley got bitten by the late-night-baking-bug that appears to run in the family. Someone please find a vaccination before we all become diabetics. But before you do that, do yourself a favor and have one of these.

 

Strawberry Lemon Bars

Cook Time: 45 minutes

Ingredients (serves 10)

  • 1/2 c. chopped fresh strawberries
  • 2 sticks butter (1/2 lb.)
  • 1/2 c. sugar
  • 2 c. flour
  • 1/4 t. salt
  • 6 eggs
  • 2 1/2 c. sugar
  • 1 c. freshly squeezed lemon juice
  • 3/4 c. flour
  • 1/4 c. powdered sugar

Instructions

Preheat your oven to 350 degrees.

Put the strawberries in a small saucepan over medium heat. Cook until the strawberries are soft and fall apart, stirring occasionally.

Mash the strawberries with a fork to break them up, then remove from the heat and set aside to cool.

In a medium mixing bowl, cream together the butter (softened) and sugar then gradually add in the flour and salt.

When the mixture forms into a soft dough, empty it into a greased baking pan (I used a 9x13x2 pan) and pat it down with your floured hands until it covers the entire bottom of the pan evenly.

Put the crust in the oven to bake for 10-15 minutes, or until the crust just starts to brown lightly.

While the crust is baking, prepare the filling by whisking together the eggs, sugar, lemon juice, and flour until the mixture is very smooth.

When the crust comes out of the oven, gently pour the filling mixture over the hot crust in the pan.

Take the cooled strawberries and gently spoon it in dollops all over the filling. Use the back of a spoon to gently swirl the strawberry mixture around so that there is strawberry in each piece.

Return the pan to the oven and bake for 30 minutes, or until the filling is set and the top just begins to brown.

Let the bars cool in the pan until they are room temperature (overnight is best).

When the bars are cool, dust with confectioners sugar and slice into squares.

    Heart be still. The relationship between Ashley and you is priceless. Btw, I can’t wait to try the strawberry lemon bars. It looks easy to make and delicious.

    The world better look out. Ashley is so talented already and she’s so young! I love seeing sisters who have a close relationship, as my relationship with my sister is close and means SO SO much to me.
