I was supposed to be showing you a fabulous recipe for healthy banana bread today. But I made one too many adjustments and it ended up being less than desirable. Hey, kitchen fails happen to the best of us (and I’m not even the best of us :P). So here I am, showing you my delicious lunch instead.
We’re leaving for Georgia first thing in the morning, and one of the thing’s we were trying to finish from our fridge is my latest batch of strawberry jam. You can use storebought jam, I’m sure it will be just as tasty! The sweetness from the strawberries and the tartness from the balsamic go so perfectly together and would brighten up any salad.
Strawberry Balsamic Vinaigrette

Ingredients
- 1 T. strawberry jam
- 2 T. balsamic vinegar
- 3 1/2 T. olive oil
- 1/4 t. salt
- dash of pepper
Instructions
Place jam and vinegar in the bowl of a food processor and blend until well combined.
Drizzle the olive oil in gradually while the processor is running.
After the dressing has mixed for a minute, scrape down the sides and bottom of the bowl, add the salt and pepper then continue to blend for another few minutes. The dressing should be very silky smooth and a consistent brown in color.
I had this salad with a bowl of tomato-lentil soup on the side and I just LOVE the flavor of the dressing! I even put some over my veggies at dinner tonight.
You can put the dressing over greens with some fresh sliced strawberries like I did, or you could add it to any other type of salad or heat it and use it like a sauce. Personally I loved the peppery flavor of the arugula with the sweet and tangy dressing!

I just finished making a HUGE salad for my lunch and was looking for a strawberry vinaigrette to use with it since I had some fresh strawberries that need to be used…I was a bit disheartened that this one didn’t have fresh strawberries, until I remembered I have strawberry jelly/jam in my fridge and can use my fresh ones in both the vinaigrette and my salad. 🙂
