There’s something brewing right around the corner…I like to refer to it as the Two Weeks That Shall Not Be Named. The weeks that every law student dreads and can’t wait to put behind them. They’re coming. Speaking of which, I went out to pizza with one of my classes yesterday and my wonderful classmates were telling me that they read the blog! I had no idea! Shoutout to the AWESOME Heikes and Brownies! 😀 The fact that you read my blog clearly shows that you are the smartest people in the whole law school. But I knew that already.
The good part about exams sneaking up is that this was the last week of classes! Â I celebrated by eating over 2,000 calories…not sure how that happened but oh well. I don’t care. It was worth it.
I’ve been working on perfecting this pancake recipe and I’ve come pretty darn close! These were quite tasty and the berries just make it even better. I LOVE the spring.
I’m obsessed with this probiotic mango lassi drink from Trader Joe’s. It’s a bit like kefir in terms of consistency and taste, but the flavor is just downright delicious and I find it a lot easier to drink than kefir.
Lunch: Monterrey Chicken Sandwich (grilled chicken, monterrey cheese, bacon, avacado, lettuce, and tomato on a croissant) with fries, Toffacino Ice Cream Cake
We’ve made an agreement that for budget reasons we should only be eating lunch out once a week. So we decided to make it a good one! We went to Center Street Grill, where they started us off with a tasty wonton bruschetta as an amuse bouche.
My sandwich was awesome! I had an inner debate about whether to sub out the fries for a salad…but I decided that I really wanted fries and that was that! No guilt here, they were deeeeelicious.
I completely cleaned my plate and was still feeling like dessert so I decided to go for a lunch portion of this deliciousness:
Dinner: mexican pizza (Taco Bell style), raspberry lemonade
This dinner was an experiment because I was craving a Taco Bell mexican pizza (which I used to eat all the time as a kid) but Taco Bell is not an establishment that I support so I wanted to try making it at home. It was a success! If anyone is interested then I can definitely do a post on it, it’s a really easy dinner! Inside is ground beef and refried beans, and on top is enchilada sauce, mexican cheese, tomatoes, and green onions. All layered around two “fried” whole wheat tortillas.
A delicious fizzy drink:
Veggie/Dessert: chocolate green monster
I was supposed to roast some asparagus along with dinner but I totally forgot! I failed with vegetable intake today. Chocolate green monster to the rescue!
I’m off to further procrastinate on homework until I fall asleep.

I do the whole at-home mex pizza thing too and its soooo gooood!!! Did you know they put silica/SAND in the tortilla shells they use for the pizzas? Oh yes! lots of anti-caking stuff as well — we’re way better off with our homemade versions! =)
