I know what you’re thinking. This is certainly the fanciest, most gourmet recipe that I have ever shared with you.
Well these days, with the second year of law school coming to a crazy close, I’m not doing too much fancy. It’s more about meals that are quick, cheap, taste good, and are at least moderately healthy! Enter this delicious tuna salad. What “kicks it up”? The subtle flavor of the sesame oil makes all the difference, I swear. The red bell pepper provides a much needed crunch, and the avocado and tomatoes keep things juicy and add great flavor.
Kicked-Up Tuna Salad

Ingredients (serves 1)
- 1 can chunk light tuna
- 2 T. olive oil mayo
- 1 t. sweet relish
- 3 T. diced avocado
- 3 T. diced grape or pearl tomatoes
- scant 1/4 c. diced red bell pepper
- 1/4 t. salt
- 1/2 t. olive oil
- 1/2 t. sesame oil (toasted sesame oil is even better)
- a few dashes of hot sauce (optional)
Instructions
Combine all ingredients in a bowl and gently toss to combine with a fork until everything is incorporated.
Serve with crackers or as a sandwich and enjoy!
Tuna is so good for you and is crazy cheap so it’s become a lunchtime staple in our house. If you turn your nose up at the thought of a boring old tuna salad, you should really try this. I think you’ll be pleasantly surprised!

I’ve always steered clear of salads like this because of the mayo…eww. but this does sound really good. I may just have to suck it up… oooh or I’ll try greek yogurt. yah. yum.

Haha, I actually had a tuna sandwich for lunch today!! I love the versatility of that food. I had some in with lots o greens Monday for a stellar salad. Oh and the fact that it is cheap is a bonus 🙂
