It may be the middle of January, but that doesn’t mean your breakfast has to feel like it! This morning, my breakfast felt like a bright, sunny day on the beach somewhere.
I seriously love the flavor combination of pineapple and coconut, and I love to use the ingredients together in a lot more than just cocktails. I cooked pineapple tidbits inside my oats this morning and topped it with a fresh batch of coconut butter to give it that delicious tropical flair! Coconut butter is just unsweetened coconut flakes blended together until it forms a creamy butter. I add a tiny bit of vanilla and oil to mine while processing, and it only takes a few minutes to make (if anyone wants a tutorial just let me know, I’d be happy to). This might be my new favorite oatmeal topping!
Go grab yourself some pineapple tidbits (Trader Joe’s has them frozen in bags for a steal) and shredded coconut and send yourself to the beach in the morning! You deserve it.
Pina Colada Oatmeal

Ingredients (serves 1)
- 1 1/2 c. milk (any kind you like)
- 3/4 c. old fashioned oats
- 1/2 c. pineapple tidbits
- 2 t. brown sugar
- 1 T. coconut butter
Instructions
In a small saucepan, stir together the oats and milk and bring them to a boil over medium heat.
Once the mixture boils, reduce the heat to medium-low and let simmer for 5 minutes.
While the oatmeal is cooking, stir together the pineapple and brown sugar together in a microwave safe container and microwave it for about a minute.
Stir the pineapple mixture into the oats and continue to cook for about another 5 minutes, or until the oatmeal is thick and has absorbed the milk.
Stir the coconut butter into the hot oatmeal, or drizzle on top.
I don’t know if it was the addition of the coconut or what, but this oatmeal really filled me up for a long time! I’ve got more coconut butter ready and waiting for tomorrow’s breakfast. I’m thinking it would be amazing along with some Nutella…mmmmmm…
I can’t wait to make the most of this 3-day weekend! Just another reason to love MLK.
