It’s Tuesday. I have three hours on my hands before I have to be at class again. I had leftover mashed sweet potato from making sweet potato pie. It had to be done.
It’s been too long since I shared one of my oatmeal creations with you all! I’m pretty much an oatmeal fanatic (which I’m sure you can tell from my What I Ate Wednesdays where it seems all I do is eat oatmeal and go to Moe’s…), and have been since I was a kid. I love looking for new ways to eat my oats. For a while I was in a Coach’s Oats phase because my mom suggested it to me and then gave me a 5 lb. bag of it, which I quickly made my way through! While I love the steel-cut texture of Coach’s oats, lately I’ve been back to the good old fashioned rolled oats. I tend to eat them the same way every time: cooked in almond milk with a little cinnamon and apple butter on top. But like I said, it’s always fun to have something new!
[amd-zlrecipe-recipe:6]I like these oats a lot better than pumpkin oats, which I tried to like but couldn’t really bring myself to. I told you a few days ago–I’m a sweet potato girl! If you’re wondering to yourself whether peanut butter really goes with sweet potato…the answer is YES! It’s SUCH a good combo.
Seriously, come over to my house. We can have sweet potato pie oatmeal for breakfast, and then just eat actual sweet potato pie the rest of the day.
I’m off to enjoy my couple more hours of freedom before going to learn about opening and closing statements!

Peanut butter is never optional. This looks to die for. My oatmeal obsession changes with the seasons. I’m looking forward to lots of chocolate oats made with chocolate almond milk this winter.

Great idea! I never thought of combining sweet potatoes and oatmeal. I have done some other neat things with oatmeal like cooking it inside of a pumpkin. I will have to see if my wife would live to give this recipe a try. Thanks
